Like a carrot dangling to make a horse run faster, when people know there is a Freebie or a Gift waiting for them, they will spend more money and visit more often in order to get that prize faster.
And that Equals more revenue for you. - It's all but guaranteed.
Perhaps the greatest benefit to a Loyalty program, is not the additional sales you will get, but that you are building a database of customers that you have control over and you can market to over and over.
